Buffalo chicken sweet potato Fries

Ingredients

  • 1 Sweet potato

  • 6oz of 98% Fat Free Chicken Breast, cubed

  • Hot Wing Buffalo Sauce low sodium to taste

  • FAT FREE Cheese Cheddar,

  • Part-Skim Mozzarella

  • 2 Green Onions diced

  • FAT FREE / LOW FAT Ranch Dressing to taste

Instructions

  1. Preheat oven to 425 degrees.

  2. Spread sweet potato fries in single layer on baking sheet.

  3. Bake for 20-25 minutes or until crispy.

  4. Heat oil over medium heat in skillet. Add cubed chicken breast. Cook until no longer pink and golden -- about 7-8 minutes. Pour sauce over chicken and cook for 1 minute longer.

  5. Top cooked sweet potato fries with buffalo chicken. Sprinkle cheese on top.

  6. Return to oven and cook until cheese is melted -- about 2-3 minutes.

  7. Remove from oven and top with green onions and drizzle with ranch dressing.

  8. Serve immediately.
