Buffalo chicken sweet potato Fries
Ingredients
1 Sweet potato
6oz of 98% Fat Free Chicken Breast, cubed
Hot Wing Buffalo Sauce low sodium to taste
FAT FREE Cheese Cheddar,
Part-Skim Mozzarella
2 Green Onions diced
FAT FREE / LOW FAT Ranch Dressing to taste
Instructions
Preheat oven to 425 degrees.
Spread sweet potato fries in single layer on baking sheet.
Bake for 20-25 minutes or until crispy.
Heat oil over medium heat in skillet. Add cubed chicken breast. Cook until no longer pink and golden -- about 7-8 minutes. Pour sauce over chicken and cook for 1 minute longer.
Top cooked sweet potato fries with buffalo chicken. Sprinkle cheese on top.
Return to oven and cook until cheese is melted -- about 2-3 minutes.
Remove from oven and top with green onions and drizzle with ranch dressing.
Serve immediately.
